Deep Dark Chocolate Cake

Deep Dark Chocolate Cake

(This version is Gluten and Dairy Free)

2 cups Better Batter (I get this at

2 cups sugar

1 cup cocoa powder

1 1/2 teaspoons double acting baking powder

1 1/2 teaspoons baking soda

2 jumbo eggs

1 cup vanilla almond milk

1/2 cup corn oil (or vegetable oil)

2 cups boiling water

Combine dry ingredients in a large bowl.

Add eggs, milk, oil, and vanilla.

Beat two minutes at medium speed.

Stir in 2 cups of boiling water. (Batter may be thin.)

Pour into a 13″x9″x2″ pan.

Bake at 350 degrees for 34-40 minutes until toothpick comes out clean.

Cool and then frost.

Chocolate Frosting
1/4 cup shortening, melted
1/2 cup cocoa
1/4 teaspoon salt
1/3 cup almond milk
1 1/2 teaspoons vanilla extract
3 1/2 cups confectioner’s sugar
Mix together until smooth. Spread over cooled cake.

This is an example of what you can do with the cake. I made this cake for my sons 4th birthday and guess what, the cake is gone! 🙂
