Deep Dark Chocolate Cake

Deep Dark Chocolate Cake

(This version is Gluten and Dairy Free)

2 cups Better Batter (I get this at Amazon.com)

2 cups sugar

1 cup cocoa powder

1 1/2 teaspoons double acting baking powder

1 1/2 teaspoons baking soda

2 jumbo eggs

1 cup vanilla almond milk

1/2 cup corn oil (or vegetable oil)

2 cups boiling water

Combine dry ingredients in a large bowl.

Add eggs, milk, oil, and vanilla.

Beat two minutes at medium speed.

Stir in 2 cups of boiling water. (Batter may be thin.)

Pour into a 13″x9″x2″ pan.

Bake at 350 degrees for 34-40 minutes until toothpick comes out clean.

Cool and then frost.

Chocolate Frosting
1/4 cup shortening, melted
1/2 cup cocoa
1/4 teaspoon salt
1/3 cup almond milk
1 1/2 teaspoons vanilla extract
3 1/2 cups confectioner’s sugar
Mix together until smooth. Spread over cooled cake.

This is an example of what you can do with the cake. I made this cake for my sons 4th birthday and guess what, the cake is gone! 🙂

Just remember if you need this recipe changed to using regular flour, or made sugar free, or low carb I’d be happy to do that for you. Just send me an email at HousewifeRecipes81@gmail.com and let me know what you need.
